Ingredients

  • 250g wide rice noodles
  • 300g chicken, sliced
  • 2 eggs
  • 200g Chinese broccoli (or pak choi)
  • 3 garlic cloves
  • For sauce: 3 tbsp soy sauce, 2 tbsp dark soy, 1 tbsp oyster sauce, 1 tsp sugar
  • 3 tbsp oil

Instructions

  1. Soak the noodles per the packet.
  2. Stir-fry the chicken in oil until golden; push aside.
  3. Scramble the eggs in the same pan.
  4. Add the garlic, then the noodles and sauce; toss over high heat for char.
  5. Stir in the greens until just wilted.

  • Don't over-soak the noodles — they finish in the pan.
