One-Pot Vegetable Pasta

Pasta and vegetables cooked together in one pot with tomato and herbs — minimal washing up, maximum flavour.

Ingredients

  • 350g pasta
  • 1 onion, sliced
  • 3 garlic cloves, sliced
  • 1 courgette, sliced
  • 1 red pepper, sliced
  • 1 can chopped tomatoes
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp chilli flakes
  • 1 litre stock
  • Salt and pepper
  • Fresh basil and parmesan

Instructions

  1. Add everything except the basil and parmesan to a wide pot.
  2. Bring to a boil, then simmer gently, stirring often, for 12-15 minutes until the pasta is tender and the sauce has thickened.
  3. If it looks too dry, add a splash of water; too wet, simmer uncovered for a few more minutes.
  4. Tear in the basil and serve with parmesan.

  • Stir more often than a normal pasta pot — the starch makes the bottom catch.
  • Cook until the pasta is just al dente; it carries on softening as it sits.

Serving suggestions

  • Lovely with a green salad and bread.

Storage & reheating

Keeps 2 days; loosen with water when reheating.
