Ingredients

  • 3 cups cold cooked rice
  • 200g chicken, diced
  • 2 eggs
  • 3 garlic cloves, minced
  • 1 shallot, sliced
  • 2 tbsp kecap manis (sweet soy)
  • 1 tbsp soy sauce
  • 1 tsp chilli paste
  • 3 tbsp oil
  • Spring onion and cucumber to serve

Instructions

  1. Fry the chicken in oil until golden; push aside.
  2. Add the garlic and shallot for a minute.
  3. Tip in the rice and break it up over high heat.
  4. Stir in the kecap manis, soy sauce and chilli paste until evenly coated.
  5. Fry the eggs separately and serve one on each plate with cucumber and spring onion.
