Mushroom Rice Pilaf

Ingredients

  • 1.5 cups long-grain rice
  • 250g mushrooms, sliced
  • 1 onion, chopped
  • 2 garlic cloves
  • 3 cups stock
  • 1 tsp thyme
  • 3 tbsp oil
  • Salt and pepper
  • Parsley

Instructions

  1. Cook the mushrooms in oil until golden; set aside half.
  2. Soften the onion and garlic.
  3. Add the rice and toast for a minute.
  4. Pour in the stock with the thyme; cover and cook 18 minutes.
  5. Fold in the mushrooms and parsley.
