Ingredients

  • 1 cup brown or green lentils
  • 1 cup rice
  • 3 large onions, thinly sliced
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 4 tbsp olive oil
  • Salt and pepper

Instructions

  1. Boil the lentils until almost tender, about 20 minutes; drain.
  2. Meanwhile, fry the onions slowly in the oil until deep brown and crisp; reserve half.
  3. Add the rice, cumin, cinnamon and half the onions to the lentils with 2 cups water.
  4. Cover and cook for 15 minutes until the rice is tender.
  5. Top with the reserved crispy onions.
