Moroccan Chickpea Tagine

Ingredients

  • 2 cans chickpeas, drained
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can chopped tomatoes
  • 8 dried apricots, halved
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 300ml stock
  • Fresh coriander to serve

Instructions

  1. Heat the oil and soften the onion for 6-7 minutes.
  2. Add the garlic and spices and stir for a minute.
  3. Tip in the tomatoes, chickpeas, apricots and stock.
  4. Simmer gently for 20-25 minutes until thick and rich.
  5. Season to taste and scatter with fresh coriander.
