Ingredients

  • 1 cup red lentils, rinsed
  • 2 onions, finely chopped
  • 4 garlic cloves
  • 1 thumb ginger
  • 2 tbsp berbere
  • 2 tbsp tomato paste
  • 4 tbsp oil
  • Salt

Instructions

  1. Cook the onions slowly in a dry pan for 10 minutes until softened.
  2. Add the oil, garlic, ginger and berbere; fry 3 minutes.
  3. Stir in the tomato paste, then the lentils and 500ml water.
  4. Simmer 15 minutes until the lentils are just tender but still hold their shape.
  5. Season generously.
