Ingredients

  • 3 large aubergines
  • 6 garlic cloves, minced
  • 3 tomatoes, chopped
  • 3 eggs
  • 1 tsp turmeric
  • 4 tbsp oil
  • Salt and pepper
  • Flatbread to serve

Instructions

  1. Char the whole aubergines over a gas flame or under the grill until blackened and very soft.
  2. Cool, peel, and roughly mash the flesh.
  3. Fry the garlic in oil until pale gold.
  4. Add the turmeric, then the tomatoes; cook 8 minutes until thick.
  5. Stir in the mashed aubergine.
  6. Push the mixture aside and scramble the eggs in the cleared space; then fold them in.
  7. Season and serve.
