Mexican Quesadilla

Ingredients

  • 4 large flour tortillas
  • 250g grated cheese (mix of cheddar and mozzarella)
  • 1 can black beans, drained
  • 1 red pepper, sliced
  • 1 onion, sliced
  • 1 tsp cumin
  • 1 tsp paprika
  • 3 tbsp oil
  • Soured cream, salsa and guacamole to serve

Instructions

  1. Sauté the onion and pepper in oil; add cumin and paprika.
  2. Mash the beans lightly with a fork.
  3. Spread half a tortilla with beans, then cheese, then vegetables; fold.
  4. Cook in a dry pan over medium heat 2 minutes a side until golden and cheese melts.
  5. Cut into wedges.
  6. Serve with soured cream, salsa and guacamole.
