Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, sliced
  • 100g feta, crumbled
  • 1/2 cup olives
  • Handful parsley and mint
  • For dressing: 4 tbsp olive oil, juice of 1 lemon, 1 tsp oregano, 1 garlic clove, salt

Instructions

  1. Cook the quinoa per the packet; cool.
  2. Whisk the dressing.
  3. Combine all the ingredients in bowls.
  4. Drizzle with dressing.
