Mauritian Rougaille

Ingredients

  • 6 tomatoes, chopped (or 2 cans)
  • 2 onions
  • 5 garlic cloves
  • 1 thumb ginger
  • 2 thyme sprigs
  • 10 curry leaves
  • 2 green chillies
  • 3 tbsp oil
  • Salt
  • Coriander
  • Sausages, fish or eggs to add

Instructions

  1. Soften onion, garlic and ginger in oil 5 minutes.
  2. Add thyme, curry leaves and chilli.
  3. Stir in tomatoes; simmer 20 minutes until thick.
  4. Add sausages, fish chunks or eggs; cook until done.
  5. Finish with coriander.
