Malaysian Roti Canai

Ingredients

  • 400g flour
  • 1 tsp salt
  • 1 egg
  • 200ml water
  • 100g ghee or butter
  • Extra ghee for cooking
  • Curry sauce to serve

Instructions

  1. Mix flour, salt, egg and water into a soft dough; knead 8 minutes.
  2. Divide into 6 balls; coat in ghee.
  3. Rest at least 3 hours in ghee (this is the secret).
  4. Stretch each ball as thin as possible — almost translucent.
  5. Fold edges in, then roll up loosely into a coil.
  6. Flatten and cook on a hot greased griddle 1-2 minutes a side.
  7. Crush slightly to reveal layers.

  • Long resting in ghee makes them stretchy.
