Peruvian Lomo Saltado

Ingredients

  • 500g beef sirloin, in strips
  • 1 onion, in wedges
  • 2 tomatoes, in wedges
  • 1 red chilli (aji amarillo if possible)
  • 3 garlic cloves
  • 3 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • Coriander
  • 3 tbsp oil
  • To serve: chips and white rice

Instructions

  1. Heat oil very hot in a wok or large pan.
  2. Sear the beef in batches; set aside.
  3. Stir-fry onion 2 minutes, then add garlic and chilli.
  4. Return beef; add tomato.
  5. Pour in soy and vinegar; toss over high heat 1 minute.
  6. Stir in chips and coriander.
  7. Serve over rice.
