Lentil Soup

A simple, warming lentil soup with onion, carrot and herbs — the dinner that costs almost nothing and feeds everyone.

Ingredients

  • 1.5 cups brown or green lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 can chopped tomatoes
  • 1.5 litres stock
  • 3 tbsp olive oil
  • Salt and pepper
  • Lemon and parsley to finish

Instructions

  1. Heat the oil and soften the onion, carrot and celery for 8 minutes.
  2. Stir in the garlic and thyme.
  3. Add the lentils, tomatoes, stock and bay leaf.
  4. Simmer for 25-30 minutes until the lentils are tender.
  5. Season generously and finish with a squeeze of lemon and parsley.
