Lemon Pepper Chicken Wings

Ingredients

  • 1kg chicken wings
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • For sauce: 80g butter, zest of 2 lemons, juice of 1 lemon, 1 tbsp coarse black pepper, 1 tsp dried thyme

Instructions

  1. Pat the wings very dry.
  2. Toss with baking powder, salt and garlic powder.
  3. Arrange on a rack on a tray.
  4. Bake at 220C for 40-45 minutes, turning once, until very crisp.
  5. Melt butter with lemon zest, juice, pepper and thyme.
  6. Toss the hot wings in the sauce.
