Lemon Herb Roast Chicken Thighs

Ingredients

  • 8 chicken thighs, skin on
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 1 tbsp dried herbs
  • Salt and pepper

Instructions

  1. Pat the thighs dry and toss with oil, lemon, garlic, herbs and seasoning.
  2. Arrange skin-side up in a roasting tin.
  3. Roast at 200C for 35 minutes until the skin is crisp and golden.
  4. Spoon the pan juices over before serving.
