Ingredients

  • 4 paratha or roti, chopped roughly
  • 200g cooked chicken curry, chopped
  • 2 eggs
  • 1 onion
  • 2 garlic cloves
  • 1 leek
  • 2 green chillies
  • 1 carrot, julienned
  • 3 tbsp oil
  • Soy sauce, salt

Instructions

  1. Stir-fry onion, leek, garlic and chilli in oil 3 minutes.
  2. Add carrot; cook 2 minutes.
  3. Push aside; scramble eggs in the cleared space.
  4. Add chopped roti and meat curry; toss to combine.
  5. Season with soy sauce and salt.
  6. Eat immediately.
