Ingredients

  • 1 cup rice
  • 1 cup brown lentils
  • 1 cup small pasta
  • 1 can chickpeas
  • For sauce: 1 can chopped tomatoes, 3 garlic cloves, 1 tbsp vinegar, 1 tsp cumin, 1 tsp chilli
  • 3 onions, sliced and fried crisp
  • Oil, salt

Instructions

  1. Cook the lentils until tender; cook the rice and pasta separately.
  2. Fry the onions slowly until deep brown and crisp.
  3. For the sauce, soften the garlic, add the cumin, chilli, tomatoes and vinegar; simmer 10 minutes.
  4. Layer the rice, lentils, pasta and chickpeas in bowls.
  5. Top with the tomato sauce and a generous pile of crispy onions.
