Thai Khao Pad (Fried Rice)

Ingredients

  • 3 cups cold cooked jasmine rice
  • 300g chicken breast, sliced
  • 3 garlic cloves, minced
  • 2 eggs, beaten
  • 1 onion, chopped
  • 2 spring onions
  • 2 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • 3 tbsp oil
  • Cucumber, lime, coriander to serve

Instructions

  1. Stir-fry the chicken in oil until golden; push aside.
  2. Scramble the eggs in the cleared space.
  3. Add the garlic and onion; cook 1 minute.
  4. Tip in the rice and break it up.
  5. Stir in the fish sauce, soy sauce and sugar.
  6. Toss over high heat 2 minutes.
  7. Top with spring onion.
