Ingredients

  • 1kg oxtail (or beef shin)
  • 1 onion
  • 5 garlic cloves
  • 3 tbsp ground annatto seeds (or paprika)
  • 100g rice flour
  • 100g peanut butter
  • 3 tbsp toasted peanuts
  • 1 aubergine, chunked
  • 200g green beans
  • 2 pak choi
  • 3 tbsp oil
  • Shrimp paste (bagoong) to serve

Instructions

  1. Boil oxtail in 2 litres salted water for 2.5 hours; reserve broth.
  2. Soften onion and garlic in oil.
  3. Stir in rice flour and annatto.
  4. Whisk in 1 litre broth gradually until smooth and thick.
  5. Add peanut butter and toasted peanuts; cook 10 minutes.
  6. Add oxtail and vegetables; cook 10 minutes more.
