Austrian Kaiserschmarrn

Ingredients

  • 4 eggs, separated
  • 3 tbsp sugar
  • 150g flour
  • 250ml milk
  • 1 tsp vanilla
  • Pinch of salt
  • 50g raisins, soaked
  • 2 tbsp butter
  • Icing sugar
  • Plum compote to serve

Instructions

  1. Whisk the egg yolks with sugar and vanilla.
  2. Stir in the flour, milk and salt to a smooth batter.
  3. Whip the egg whites to stiff peaks and fold in.
  4. Melt butter in a pan and pour in the batter; scatter raisins.
  5. Cook 4 minutes until set on the bottom, then flip in pieces.
  6. Cook another 3 minutes, tearing into rough chunks with two forks.
  7. Dust with icing sugar and serve with compote.
