Jollof Rice

Ingredients

  • 2 cups long-grain rice, rinsed
  • For the base: 3 tomatoes, 1 red pepper, 1 scotch bonnet, 1 onion, all blended
  • 3 tbsp tomato paste
  • 1 onion, sliced
  • 1 tsp thyme
  • 1 tsp curry powder
  • 2 bay leaves
  • 4 tbsp oil
  • 500ml stock
  • Salt

Instructions

  1. Fry the sliced onion in oil, then add the tomato paste and cook 3 minutes.
  2. Pour in the blended base and fry for 10-15 minutes until thick and reduced.
  3. Stir in the thyme, curry powder, bay leaves and stock.
  4. Add the rice, cover tightly and cook on low for 25-30 minutes, stirring once.
  5. Let the bottom catch slightly for the prized smoky layer.
