Japanese Curry Rice

Ingredients

  • 500g beef or chicken, cubed
  • 2 onions, sliced
  • 2 carrots, chunks
  • 2 potatoes, chunks
  • 2 tbsp oil
  • For the sauce: 3 tbsp flour, 2 tbsp curry powder, 1 tbsp garam masala, 1 tbsp soy sauce, 1 tbsp honey, 800ml stock
  • Cooked rice to serve

Instructions

  1. Brown the meat in oil; lift out.
  2. Soften the onions, then add the carrot and potato.
  3. Stir in the flour and spices, then gradually add the stock, soy and honey.
  4. Return the meat and simmer for 30 minutes until everything is tender and the sauce is thick.
  5. Serve over rice.

  • Let it sit a few minutes before serving — it thickens further.
