Ingredients

  • 400g penne or rigatoni
  • 500g Italian sausages, skinned and crumbled
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 tsp fennel seeds
  • 1/2 tsp chilli flakes
  • 1 can chopped tomatoes
  • 200ml double cream
  • 50g parmesan
  • Olive oil
  • Basil

Instructions

  1. Cook pasta until al dente; reserve pasta water.
  2. Brown the sausage in olive oil, breaking it up.
  3. Add the onion, garlic, fennel seeds and chilli; cook 5 minutes.
  4. Stir in the tomatoes; simmer 10 minutes.
  5. Pour in the cream; warm through.
  6. Toss with pasta, loosen with pasta water.
  7. Finish with parmesan and basil.
