Indonesian Sambal Goreng Telur

Ingredients

  • 6 hard-boiled eggs, peeled
  • 3 tbsp sambal oelek (or chilli paste)
  • 4 shallots, sliced
  • 3 garlic cloves
  • 1 tomato, chopped
  • 1 lemongrass, bruised
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 3 tbsp oil
  • Salt

Instructions

  1. Lightly fry the eggs in oil until the surface blisters; set aside.
  2. Soften the shallots, garlic and lemongrass.
  3. Add the sambal, tomato, tamarind and sugar; cook 5 minutes.
  4. Return the eggs and toss to coat.
  5. Season and serve.
