Ingredients

  • 500g beef shin
  • 1.5 litres water
  • For paste: 1 onion, 4 garlic, 1 thumb ginger, 1 tsp turmeric, 2 lemongrass, 1 tsp coriander seeds
  • 2 lime leaves
  • 2 tbsp soy sauce
  • 3 tbsp oil
  • To serve: rice, beansprouts, fried shallots, lime, sambal

Instructions

  1. Simmer the beef in the water for 1.5 hours until tender, skimming.
  2. Blend the paste ingredients and fry in oil until fragrant.
  3. Add the paste and lime leaves to the broth.
  4. Slice the beef and return to the pot; simmer 10 minutes.
  5. Season with soy sauce.
  6. Serve over rice with beansprouts, fried shallots, lime and sambal.
