Greek Yoghurt Marinated Chicken

Yoghurt and lemon-marinated chicken thighs roasted with garlic and oregano — tender, juicy and full of flavour.

Ingredients

  • 8 chicken thighs, skin on
  • 1 cup Greek yoghurt
  • 4 garlic cloves, grated
  • Juice and zest of 1 lemon
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper

Instructions

  1. Mix the yoghurt, garlic, lemon, oil, oregano, paprika, salt and pepper.
  2. Coat the chicken thoroughly; rest at least 1 hour, ideally overnight.
  3. Arrange skin-side up on a lined tray.
  4. Roast at 200C for 28-30 minutes until charred at the edges and cooked through.
  5. Rest 5 minutes before serving.
