Greek Lemon Chicken and Potatoes

Ingredients

  • 8 chicken pieces
  • 1kg potatoes, in wedges
  • Juice of 2 lemons
  • 5 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 250ml chicken stock
  • Salt and pepper

Instructions

  1. Toss everything together in a large roasting tin.
  2. Roast at 200C for 50-55 minutes, turning the potatoes halfway, until the chicken is golden and the potatoes are tender.
  3. Spoon the pan juices over before serving.
