Greek Gigantes (Baked Beans)

Giant butter beans baked in a herby tomato sauce — a hearty, healthy Greek dish wonderful warm or cold.

Ingredients

  • 2 cans butter beans, drained
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 can chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tsp oregano
  • 1 tsp sugar
  • 4 tbsp olive oil
  • Handful parsley
  • Salt and pepper

Instructions

  1. Soften the onion and garlic in the oil.
  2. Stir in the tomato paste, tomatoes, oregano and sugar; simmer 10 minutes.
  3. Add the beans and tip into a baking dish.
  4. Bake at 190C for 30 minutes until thick and bubbling.
  5. Finish with parsley and a drizzle of oil.
