Ingredients

  • 600g chicken thigh fillets, cubed
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, grated
  • 1 tbsp dried oregano
  • 1 tsp paprika
  • Salt and pepper
  • Wooden skewers, soaked

Instructions

  1. Mix the marinade ingredients and rub into the chicken; rest at least 1 hour.
  2. Thread onto skewers and grill or pan-fry for 5-6 minutes a side until charred and cooked through.
  3. Rest for 5 minutes before serving.
