Ghanaian Waakye

Rice and beans cooked together with sorghum leaves until reddish-brown — a beloved Ghanaian breakfast and street meal.

Ingredients

  • 1 cup black-eyed beans, soaked
  • 1.5 cups long-grain rice
  • 1 tsp bicarbonate of soda
  • 1 onion, chopped
  • 1 stock cube
  • Salt
  • To serve: shito (pepper sauce), boiled egg, fried plantain

Instructions

  1. Boil the soaked beans with the bicarbonate and a little salt for 25 minutes until just tender.
  2. Add the rice, onion, stock cube and enough water to cover by 2cm.
  3. Simmer covered for 18-20 minutes until the rice is soft and reddish from the bean liquid.
  4. Rest 10 minutes off the heat.
  5. Serve with shito, boiled egg and plantain.

  • Bicarbonate gives the signature reddish colour the way sorghum leaves traditionally do.
  • Don't lift the lid while the rice cooks.
