German Spätzle

Ingredients

  • 400g flour
  • 4 eggs
  • 200ml milk
  • 1 tsp salt
  • Pinch of nutmeg
  • 60g butter
  • Parsley

Instructions

  1. Whisk flour, eggs, milk, salt and nutmeg into a thick batter; rest 20 minutes.
  2. Bring salted water to a rolling boil.
  3. Press batter through a spätzle maker or large-holed colander into the water.
  4. Cook 2 minutes — they float when done.
  5. Lift out with slotted spoon.
  6. Toss with melted butter and parsley.
