Garlic Butter Prawns

Ingredients

  • 400g raw prawns, peeled
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1/2 tsp chilli flakes
  • Juice of 1/2 lemon
  • Salt and pepper
  • Parsley, chopped

Instructions

  1. Pat the prawns dry and season with salt and pepper.
  2. Melt the butter in a pan over medium-high heat.
  3. Add the garlic and chilli flakes and cook for 30 seconds until fragrant.
  4. Add the prawns and cook for 2-3 minutes until pink and just cooked.
  5. Squeeze in the lemon, scatter with parsley and serve immediately.

  • Do not overcook prawns — they turn rubbery fast. Pull them off as soon as they curl and turn pink.
  • Drying the prawns helps them sear rather than steam.
