French Onion Soup

Ingredients

  • 6 large onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 2 garlic cloves, minced
  • 1 tbsp plain flour
  • 100ml dry white wine (optional)
  • 1.2 litres beef or vegetable stock
  • 1 tsp fresh thyme
  • 4 slices baguette, toasted
  • 100g Gruyère, grated

Instructions

  1. Melt the butter with the oil in a heavy pot and add the onions and sugar.
  2. Cook slowly for 35-40 minutes, stirring often, until deeply golden — this is the heart of the soup.
  3. Stir in the garlic and flour and cook for 2 minutes.
  4. Pour in the wine and let it bubble away, then add the stock and thyme.
  5. Simmer for 20 minutes and season.
  6. Ladle into oven-proof bowls, top each with a slice of baguette and a generous handful of cheese.
  7. Grill until bubbling and golden.

  • A splash of vinegar at the end brightens the broth.
