Filipino Chicken Adobo

Ingredients

  • 8 chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 8 garlic cloves, smashed
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp brown sugar
  • 2 tbsp oil
  • 1 cup water

Instructions

  1. Marinate the chicken in soy, vinegar, garlic, bay and pepper for 30 minutes.
  2. Lift the chicken out; reserve the marinade.
  3. Brown the chicken in oil all over.
  4. Pour in the marinade and water; bring to a boil, then simmer covered 30 minutes.
  5. Uncover, add sugar and reduce the sauce until glossy.

  • Don't stir while the vinegar boils off — it tastes harsh otherwise.
  • The sauce should be syrupy at the end.

  • Serve over rice with the sauce poured over.
