Ingredients

  • 2 English muffins
  • 4 slices smoked salmon
  • 4 eggs
  • 1 tbsp vinegar
  • For hollandaise: 3 yolks, 150g butter melted, lemon, salt
  • Chives

Instructions

  1. Make the hollandaise: whisk yolks with lemon over simmering water, drizzle in butter, season.
  2. Toast the muffins.
  3. Poach the eggs in vinegared water for 3 minutes.
  4. Assemble: muffin, salmon, egg, hollandaise.
  5. Top with chives.
