Easy Dulce de Leche Cake

Soft sponge layered with thick dulce de leche and cream — Argentina's most-loved birthday cake.

Ingredients

  • 6 eggs
  • 200g sugar
  • 200g flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 jar dulce de leche
  • 500ml double cream
  • 3 tbsp icing sugar
  • Desiccated coconut

Instructions

  1. Whisk eggs and sugar until tripled.
  2. Fold in flour, baking powder and vanilla.
  3. Bake in two lined tins at 180C for 25-30 minutes.
  4. Cool fully, then split each cake horizontally.
  5. Whip cream with icing sugar.
  6. Layer cake, dulce de leche, cream — repeat.
  7. Coat sides in cream and press in coconut.
  8. Chill 2 hours.
