Ingredients

  • 200g wheat noodles
  • 200g pork mince
  • 2 tbsp soy sauce
  • 1 tbsp shaoxing wine
  • For sauce: 3 tbsp tahini, 2 tbsp soy sauce, 1 tbsp black vinegar, 2 tbsp chilli oil, 1 garlic clove, 1 tsp sugar, 2 tbsp pasta water
  • Spring onion and crushed peanuts

Instructions

  1. Cook the noodles and reserve some pasta water.
  2. Fry the pork until crisp and dark, with the soy and wine.
  3. Whisk the sauce ingredients, loosening with pasta water.
  4. Pour sauce into bowls, top with noodles, then crispy pork.
  5. Finish with spring onion and peanuts.
