Dal Tadka

Ingredients

  • 1 cup yellow toor dal (or moong dal)
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tomato, chopped
  • 1 thumb ginger
  • For tadka: 4 tbsp ghee, 1 tsp cumin seeds, 5 garlic cloves sliced, 2 dried red chillies, 1/2 tsp red chilli powder, pinch asafoetida
  • Coriander

Instructions

  1. Pressure-cook or simmer the dal with turmeric, salt, tomato, ginger and 4 cups water until very soft, about 25 minutes.
  2. Whisk lightly to combine.
  3. Heat the ghee until shimmering.
  4. Add cumin, then garlic; fry until golden.
  5. Add the dried chillies, chilli powder and asafoetida.
  6. Pour the sizzling tadka over the dal.
  7. Finish with coriander.
