Nepali Dal Bhat Tarkari

Ingredients

  • For dal: 1.5 cups red lentils, 1 tsp turmeric, 1 onion, 3 garlic, 1 thumb ginger, 1 tsp cumin, 4 tbsp ghee
  • For rice: 2 cups basmati
  • For tarkari: 1 potato, 1 carrot, 1 cauliflower head, 2 tomatoes, ginger-garlic, turmeric, cumin, 2 tbsp oil
  • Lime, coriander, fried green chilli

Instructions

  1. Cook dal: lentils with turmeric and salt; temper with cumin, garlic and onion in ghee.
  2. Cook rice plain.
  3. For tarkari: brown vegetables, add ginger-garlic and spices, splash water, simmer 15 minutes.
  4. Plate: rice in centre, dal and tarkari in bowls, lime and chilli on side.
