Ingredients

  • 10 banana leaves (or large foil sheets)
  • For filling: 1 cup rice, soaked 2hr
  • 1 cup yellow split peas
  • 400g chicken thighs
  • 300g pork ribs
  • 1 onion
  • 2 spring onions
  • 3 garlic cloves
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 carrot, diced
  • 100g peas
  • Salt

Instructions

  1. Soak rice and split peas.
  2. Marinate meats with onion, garlic and spices.
  3. Lay banana leaves flat (warm them gently to soften).
  4. Spoon rice mixture in centre; add meat pieces, vegetables.
  5. Wrap tightly into parcels; tie with string.
  6. Boil in water for 3-4 hours.
  7. Unwrap to serve.
