Ingredients

  • 1kg floury potatoes
  • 1/2 cabbage or kale, shredded
  • 100g butter, plus extra
  • 100ml milk or cream
  • 4 spring onions, sliced
  • Salt and pepper

Instructions

  1. Boil and mash the potatoes; keep warm.
  2. Sauté cabbage in butter until just tender, 5 minutes.
  3. Warm milk with spring onion.
  4. Combine everything; season generously.
  5. Pile on plates; make a well in the middle with extra butter melting.
