Ingredients

  • 200g chorizo, sliced
  • 1 onion, chopped
  • 1 red pepper, sliced
  • 3 garlic cloves
  • 1 tbsp smoked paprika
  • 1 can chopped tomatoes
  • 2 cans butter beans
  • 200ml stock
  • Olive oil
  • Parsley
  • Salt and pepper

Instructions

  1. Fry the chorizo until it releases its oil.
  2. Add the onion, pepper and garlic; soften.
  3. Stir in the paprika, then the tomatoes, beans and stock.
  4. Simmer for 15 minutes until thick.
  5. Finish with parsley.
