Chicken Tagine

Ingredients

  • 8 chicken thighs
  • 2 onions, sliced
  • 3 garlic cloves
  • 1 tsp ground ginger
  • 1 tsp cumin
  • 1 tsp coriander
  • Pinch of saffron
  • 1 preserved lemon, chopped
  • 100g green olives
  • 500ml stock
  • 3 tbsp olive oil
  • Coriander
  • Salt and pepper

Instructions

  1. Brown the chicken in oil.
  2. Soften the onions and garlic, then add all the spices.
  3. Return the chicken, add the stock, preserved lemon and saffron.
  4. Cover and simmer 35 minutes.
  5. Add the olives for the last 10 minutes.
  6. Finish with coriander.
