Indian Chicken Saag

Ingredients

  • 600g chicken thighs, cubed
  • 500g spinach, blanched and blended
  • 2 onions, finely chopped
  • 2 tbsp ginger-garlic paste
  • 3 tomatoes, blended
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tbsp dried fenugreek leaves
  • 4 tbsp oil or ghee
  • 100ml cream (optional)
  • Salt

Instructions

  1. Fry onions in oil until golden.
  2. Add ginger-garlic and spices.
  3. Stir in tomato; cook until thick.
  4. Add chicken and brown.
  5. Pour in blended spinach with 1/2 cup water; cover and simmer 20 minutes.
  6. Stir in garam masala, fenugreek and cream.
  7. Season.
