Chicken Noodle Soup

Ingredients

  • 2 chicken breasts
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves
  • 1.5 litres stock
  • 150g noodles
  • 1 tsp thyme
  • Salt and pepper
  • Parsley

Instructions

  1. Soften the onion, carrot, celery and garlic in a pot.
  2. Add the chicken, stock and thyme; simmer 15 minutes.
  3. Lift out the chicken, shred it, and return.
  4. Add the noodles and cook until tender.
  5. Season and finish with parsley.

  • Cook the noodles in the soup for the most flavour, or separately if making ahead.
  • Shredding the chicken gives a nicer texture than cubes.

Serving suggestions

  • Serve with crusty bread.
