Chicken Handi

Ingredients

  • 700g chicken, bone-in pieces
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 cup yoghurt
  • 100ml cream
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 4 tbsp oil
  • Coriander and ginger strips
  • Salt

Instructions

  1. Fry the onions until golden, add the ginger-garlic.
  2. Add the tomatoes and cook until they break down.
  3. Stir in the ground spices and salt.
  4. Add the chicken and brown for 5 minutes, then stir in the yoghurt a spoon at a time.
  5. Cover and simmer 20 minutes.
  6. Stir in the cream and finish with garam masala, ginger and coriander.

  • Add the yoghurt slowly so it doesn't split.
  • A clay or heavy pot gives the best flavour.
