Ingredients

  • 400g beef mince
  • 1 onion
  • 3 garlic cloves
  • 500g pumpkin, cubed
  • 3 potatoes
  • 1 cup sweetcorn
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 3 tbsp oil
  • 4 eggs

Instructions

  1. Brown mince with onion and garlic.
  2. Add spices.
  3. Stir in pumpkin, potatoes and 500ml water; simmer 25 minutes.
  4. Mash roughly with a potato masher.
  5. Stir in sweetcorn.
  6. Fry eggs and top each portion.
