Ingredients

  • 1 large cauliflower, in florets
  • For sauce: 40g butter, 40g flour, 600ml milk, 150g grated cheese, 1 tsp mustard
  • Pinch of nutmeg
  • Salt and pepper

Instructions

  1. Boil the cauliflower for 5 minutes until just tender; drain well.
  2. Make a cheese sauce: melt butter, stir in flour, whisk in milk until thick, then most of the cheese, mustard and nutmeg.
  3. Tip the cauliflower into a dish and pour over the sauce.
  4. Top with the remaining cheese and bake at 200C for 20 minutes until golden.

  • Drain the cauliflower really well so the sauce does not turn watery.
  • A little mustard and nutmeg lifts the sauce.

  • Great as a side or a meal with bread.
