Venezuelan Cachapas

Ingredients

  • 3 cups fresh or frozen corn kernels
  • 1/2 cup masarepa
  • 3 tbsp sugar
  • 1 tsp salt
  • 100ml milk
  • 1 egg
  • Butter
  • 200g soft white cheese (queso fresco) or mozzarella

Instructions

  1. Blend corn, masarepa, sugar, salt, milk and egg to a thick batter.
  2. Heat butter in a pan.
  3. Ladle in batter to make a thick pancake.
  4. Cook 3 minutes a side until golden and cooked through.
  5. Place cheese on one half and fold; let it melt.

  • Keep them thick — cachapas aren't thin like crepes.
